Slow Cooker Quinoa Chicken Chili



With quinoa, chicken, and a lot of other tasty ingredients, this chili is hearty and good for you. This Slow Cooker Quinoa Chicken Chili is easy to make and simmers just right, making it a great comfort food.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup quinoa, rinsed and drained
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 can 28 oz crushed tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese optional, for topping
  • 1/4 cup fresh cilantro, chopped optional, for garnish

Instructions:

In a slow cooker, combine diced chicken, quinoa, black beans, kidney beans, corn, crushed tomatoes, chopped onion, chopped bell pepper, and minced garlic

Add chili powder, cumin, paprika, oregano, salt, and black pepper

Mix well to combine

Pour chicken broth over the ingredients in the slow cooker and stir

Cover and cook on low for 6-8 hours or until chicken is cooked through and flavors are well blended

Serve the chili hot, optionally topped with shredded cheddar cheese and fresh cilantro
