This one-pan roasted salmon, fennel, and potatoes dish is a simple yet elegant meal perfect for a weeknight dinner or entertaining guests. The combination of tender salmon, flavorful fennel, and crispy potatoes creates a harmonious blend of textures and tastes.
Ingredients:
- 2 salmon fillets
- 2 small fennel bulbs, sliced
- 4 medium potatoes, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 lemon, sliced
- Fresh dill for garnish
Instructions:
Turn on the oven and heat it up to 400F 200C
On a baking sheet, put potatoes and fennel that have been sliced
Salt, pepper, and minced garlic should be added along with the olive oil
Add toss to cover evenly
Put it in an oven that is already hot for 15 minutes
The potatoes and fennel should be moved to the sides of the baking sheet
Now put the salmon fillets in the middle
Add salt and pepper to the salmon
Place lemon slices on top of the salmon
When you take the baking sheet back out of the oven, roast the salmon for another 10 to 15 minutes, or until it's fully cooked and flaky
Add fresh dill as a garnish before serving
