Salmon Kale Salad



A refreshing and nutritious salad featuring tender baked salmon paired with vibrant kale and a medley of fresh vegetables, topped with tangy feta cheese and crunchy toasted almonds.

Ingredients:

  • 2 salmon fillets
  • 4 cups chopped kale
  • 1/4 cup sliced red onion
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted almonds
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F

Add some olive oil, salt, and pepper to the salmon fillets

Arrange the salmon on a baking sheet

Bake for 12 to 15 minutes, or until the salmon is fully cooked

Rub the kale with olive oil, lemon juice, salt, and pepper in a large bowl until it starts to wilt a bit

Throw in the cucumber, feta cheese, toasted almonds, red onion, and cherry tomatoes

Toss everything together in the bowl

Place a salmon fillet on top of each salad on a plate

Serve right away and enjoy!
