Healthy Oats and Applesauce Muffins



These Healthy Oats and Applesauce Muffins are a nutritious and delicious snack or breakfast option. They are made with wholesome ingredients like oats, applesauce, and whole wheat flour, and are sweetened with natural honey or maple syrup. Perfect for a quick and satisfying treat.

Ingredients:

  • 1 cup rolled oats
  • 1 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped apples
  • 1/4 cup chopped nuts optional

Instructions:

Preheat your oven to 350F 175C

In a mixing bowl, combine rolled oats and applesauce

Let it sit for 10 minutes to soften the oats

Add honey or maple syrup, Greek yogurt, eggs, and vanilla extract to the oat and applesauce mixture

Mix well

In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, salt, and ground cinnamon

Gradually add the dry ingredients to the wet mixture and stir until just combined

Do not overmix

Fold in chopped apples and nuts if using

Line a muffin tin with paper liners or grease it lightly

Fill each cup 2/3 full with the muffin batter

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely
